The aircraft should behave differently with autocordination on and off.
Autocordination basically controls the rudder for you. If you bank the airplane with auto-coordination on and you look at the "skid and slip" ball it is in the centre. Now, if you take auto-coordination off and bank the airplane in the exact same way the ball will drift to the side because you gotta use the rudder to balance the forces.
Or if I takeoff with a tail dragger with auto-coordination on the aircraft will travel in a straight line during takeoff. However, if I have auto-coordination off and I takeoff in the same manner the airplane will drift to the side in the takeoff because I gotta use the rudder to keep it straight.
First I would verify that the rudder is working.
You could probably increase the rudder strenght to tighten the curve radius. However, this is only a guess as I do not understand how the flight dynamics work.
I tried taxing with the beaver and I find that it turns pretty well. You gotta use heavy rudder, lots of throttle, and constantly tap the brakes to keep the aircraft from accelerating.
Okay, I tried taxing with the 195 and it turns equally well, maybe even better, except the tail lifts off the ground and it picks up speed faster.
They key to taxing with tail draggers at least in FS98 is to constantly tap the brakes while using heavy throttle and rudder. Almost to the point where you are taxing with the brakes on. The brakes keep the aircraft from accelerating and tighten the turn radius.
