ideal climb is about 2000 feet per minute, maybe a little more. climb speed is 250 below 10,000feet

Start with an initial climb of an angle between 10 and 15 degrees (look at the attitude indicator)
Then after some 3000ft retract flaps and shallow the climb so you can accelerate to 250kts...use the Autothrottle  and the autopilot's V/S function, it will reduce your workload.
The reason for 250kts is that below 10.000ft that's the speed limit. When you pass 10.000ft accelerate to 300knots.
If your airspeed decreases, reduce the vertical speed.  :)

I know this is a very breif guide, but I gotta head for work :(

However, I'm sure you'll enjoy flight sim even more than FIFA if you just get the hang of it :)

Well, climbing too steeply would definitely result in an airspeed loss, but not a power loss.  Your throttles shouldn't be changing automatically.

My suspicion is that you're turning on your autopilot and arming your autothrottle, but not changing your airspeed hold on the A/P panel.
