I've done it!
Using an old Logitech Wingman and this as the basic design:

I have built some rudder pedals. They are a little flimsy and need some adjustment but they do work rather well. For those of you that use a twist stick or auto rudder I can totally recommend pedals, it is quite a differant feel and makes even taxiing fun.
Improvements to the above design pending:
1. Wooden footplates with rubber covers over the Hinges to give a stronger pedal/foot surface and better grip.
2. Bicycle brake cables for less stretch and more positive control. In addition "sleeved" cables will suffer from less friction.

Glad to hear that it worked for you Smoke as im still going down the runway like a drunken sailor....I did see the one you showed us but needed the hinges to keep the gate up ;) I look forward to seeing your finished pedals :)......
