What could possibly be in a 3 hour long job interview?

I applied for a job at a local restaurant, which is opening in December. I was fortunate enough to be offered an interview, which is taking place on Monday.
They said on the email that it would take place between 6 and 9pm, but I kind of assumed that this is when all the interviews were taking place, and that I would merely be allocated a timeslot. It would appear that I am there for the solid 3 hours...
The job in mention is bar staff... The restaurant does many house-cocktails as well as a couple of the classics. I'm just wondering if you think I would be tested on any of the drinks.
Has anyone ever gone for such a long interview? The interview for this job (happily been there for over 18 months now!) was a 10 minute long 'this is where you will be working, this is what you will wear. If you want it, you can have it and I will see you next weekend'. That was easy, and I enjoy my job.
But 3 hours? Wow. Has anyone been through a similar interview procedure? Remember, for bar staff
