One of my favourite meals which I often cook for myself at Supper time is a nice red-hot Vindaloo Curry with rice..... ....

Arsenic Poisoning!

I have known that we must never eat/re-heat left-over rice the following day, but to be told that rice also contains deadly Arsenic is another nail in the list of things which are dangerous to eat!

I often fail to make a nice rice meal after boiling the Basmati rice in a large pan filled with water.
It mostly turns out like a wet, soggy rice pudding, instead of a firm rice!

Rice is dangerous for Humans to eat...but excellent for killing Rodents (Arsenic)!

I'm just hoping that the chicken and mushroom pie that I'm having for dinner today, wont poison me!... ...!

Well I guess I will be ok as I only eat rice about once a week. Seems to me that every time we turn around there is something else that we should not be eating . Its a wonder any of us are still alive

It could be the reason why the population of mainland China is only 1.5 Billion. According to the figures in that study, there should be twice as many.
I always prepare my rice the Delia Smith way, she's still alive too, probably as old as Fozzer.

2-1 Ratio Water to Rice!

(I think I probably boil my rice in far too much water, which is why it serves all soggy, instead of nice and fluffy....Fluffy is nice!!).

Madras Curry for Supper tonight with Basmati rice....

...less the Arsenic.... ...!

Hot Madras Beef Curry, with Basmati Rice, and Chips!



The rice was absolutely perfect!...(2-1 ratio. Water to Rice).

CHIPS? With curry and rice? You'll be mixing Scotch with water next.

Delia Smith's Perfect Rice

white basmati rice measured up to the 4fl oz (110ml) level in a measuring jug
½ teaspoon groundnut, or other flavourless oil
¾ teaspoon salt flakes
8fl oz (225ml) boiling water

Method

Begin by warming the frying pan over a medium heat, add the oil and swirl it around then stir in the rice – there's no need to wash it – and turn the grains over in the pan so they become lightly coated and glistening with oil.

Next add the boiling water, along with the salt, stir once only and cover with the lid. 



Turn the heat to its very lowest setting and let the rice cook gently for exactly 15 minutes.

Don't remove the lid and don't stir the rice during cooking, because this is what will break the grains and release their starch, which makes the rice sticky. 



Remove the lid, take the pan off the heat and cover with a clean tea cloth for 10 - 15 minutes before serving, then fluff it lightly with a fork and transfer the rice to a warm serving dish before it goes to the table.

A bit of a puzzle, where I live people eat rice at least twice a day from 3 years of age until they die and there is a huge lack of arsenic poisoning.
As to cooking rice, commonly here it is about four onces of rice to a cup of water.

Love the vindaloo, has set my taste buds racing.

Curry? Hurry, hurry, come and get your Indian Curry. My dear wife makes the most delicious curries. Tonight we had Muglai Byriani, a delicious rice with lots of butter.


Ingredients:

* 1 kg Mutton or chicken
* 1 kg Basmati rice
* 100 g Yogurt
* Salt to taste
* 1 medium onion
* 6 Garlic cloves
* 1 tbs Ginger paste or finely ground Ginger root
* 8 Small cardamoms
* 1 tbs garlic paste
* 10 cloves
* Ghee or 250g unsalted butter(up to 1/2 kg if you aren't heart concious)
* Kewra or rose water, few drops
* Saffron two pinch
* Turmeric two pinch
* Sugar a pinch

Recipe:

* Add mutton, salt and garlic cloves in a pot with two glasses of water. If you’re using chicken, you can do with only one glass of water.
* Cook on a low flame till the meat is tender and the water dries.
* Take one medium onion. Slice it and saute in about 4-5 tablespoons of oil till its light brown. Add the rest of the spices, yogurt and saute a little.
* Simultaneously cook the rice like Delia Smith does except add 1/4 cup of water set aside. (It won't be done yet.)
* Add the cooked meat to the sauted onions to make the masala and cook uncovered for a few minutes to evaporate excess water.
* When most of the water has evaporated,
* transfer a little rice to a pot, and on top of that add some of the meat/masala combo. Make layers of this.
* Sprinkle on it a solution of kewra, Turmeric, Saffron and pinch of suger.
* Keep it covered and on a low flame.
* Keep the pot tightly closed – you’re trying to steam cook the rice. When the rice is done, the biryani is ready. (Dry but not crunchy)
* Serve with salad, pickled or roasted garlic and home made Chutney.

O, and no arsenic (I think)

Funny you should mention Apple Pips and Arsenic... ....

I love squeezing the centre out of Apple pip husks, and eating them...

I had heard that in days of old when men were bold and their wives were not impressed. That the ost common way of doing away with the old budder was to gradually poison him with arsenic. So gradually that he wouldn't notice. Sometimes it would take years to finish him off. Just wondering how many apple seeds she gave him
O btw, dessert was apricot crumble using apricots from our one and only apricot tree. Delicious. I do know though, that some unscrupulous almond sellers will mix in a few shelled apricot pits into their nutty treets. It only takes about 6 of them to kill you apparently.

I never boil rice, but use one of these. I have had it for the last twenty years and it makes perfect rice every time. Add rice, pour in boiling water, put on lid and wait 20 minutes. As I said, Perfect rice every time.

Interesting, Matt!!

You put the rice in the container with holes on the bottom.
Add boiling water to clear the bottom of the rice tray.
Fit the lid.
Allow the rice to "steam cook", clear of the water, for 20 minutes?

Must pop into Sainsbury's to see if they have one!
