I like pancakes..

Postby Steve M » Tue Dec 10, 2013 7:21 pm

I was grocery shopping today and came across some Belgian waffles, I've heard them mentioned from time to time but never had them. After a little research, I found a lot of different ways to serve them. I have to go back to the grocer now and buy more stuff to put on them after viewing so many variations. I am reasonably sure the store bought ones aren't as good as homemade ones. (Actually made in Belgium). Has anyone here had the real Belgian waffles?

They're extremely easy to make, and incredibly good.

The only thing to know is that they come out best (in my opinion) when you use a deep waffle maker

I'm quite willing to bet that EVERBODY has their own "best Belgian waffles recipe in the world" recipe.

This is where I got my recipe from - BELGIAN WAFFLES.

And this is my version of it;

1 pkg. dry yeast (quick)
2 c. lukewarm milk
4 eggs, separated
1 tsp. vanilla
2 1/2 c. flour
1/2 tsp. salt
1 tbsp. sugar
1/2 c. melted butter

NOTE: I beat egg whites stiff first and set aside until I mix other ingredients. Saves cleaning beaters for egg whites. May freeze and use individually.

(the recipe says "May freeze and use individually.". That ain't gona happen. You'll probably eat yourself silly."

Sprinkle yeast over warm milk; stir to dissolve.

Beat egg yokes and add to yeast mixture with vanilla.

Sift together flour, salt, sugar; add to liquid ingredients. Stir in melted butter and combine thoroughly. Beat egg whites stiff; carefully fold into batter.

Let mixture stand in warm place about 45 minutes.

(This recipe, in this waffle maker, will come out very light.)

This is what I use - Waring Pro WMK300A Professional Stainless-Steel Belgian Waffle Maker. It costs $70, but is well worth it.

What makes this so much better than a pancake waffle maker is how deep it is, and how wide open the "waffles" (the indents in the waffle) are.

If you use that recipe, and that waffle maker, I can give you a 100% guarantee that you'll never eat one of those "waffle like thingies" again.

After you've tried that recipe, feel free to add whatever you want. But I make it just like that for my wife, and all she puts on it is butter and maple syrup.

The only three things that I can add are;
1) Try the heat setting around 3.5 & 4 for the first one.
2) get a cheap egg separator.
Image
3) And a flour sifter.

As for the measuring cup, just toss it. It's easier to use a soup ladle.

I make them with plain old waffle batter and they're fine. I'm not going to cook anything for breakfast that requires that much work.

Waffle batter is just pancake batter with some extra oil in it. The oil is necessary because you're not cooking them on an oiled griddle and you to keep them from sticking to the iron. I put vanilla in mine but I have real Mexican vanilla, not imitation.

My toppings are always the same, real butter and honey.

French toast is easy to make too. Eggs over easy, bacon and french toast is my favorite easy meal. 8)

Sorry Webb. I used to like waffles in restaurants.

It may be hard to believe it, but this is FAR better.

BTW - aside from the 45 minute time to let it rise from the yeast, it really isn't hard to make.

You'd just have to taste it.

It's like the difference between a cheap whisky and a really fine single malt whisky. Or Cognac, for that matter.

I once had some Martell XO cognac. The Martell XO Cognac makes lesser stuff taste like drain cleaner (well not really, but it is exceptionally smooth).

Now that I think of it, that waffle maker would probably make the "plain old waffle batter" work out pretty good.

The waffles that I make are over an inch high, and the large punched-in area, the waffle, adds more cooking surface area to the end product.

I may try it some day. When I eat waffles I usually want them now, not an hour from now.

BTW, you van also make Italian pizelle cookies in the iron.

With that foundation you can add whatever interest you.

I can't emphasizes enough how light the waffles turn out.

Just one cup of coffee???

I suppose that might be ok for some...

I like to use the Krusteze Belgian Waffle batter. Premixed, all u need is milk and an egg, and Bingo! wffle batter to die for! I just have a what looks to be a 50 year old, shallow, non-rotating waffle iron, maybe 3" in Diameter (7.62 cm for our Euro friends), no heat settings, just plug it in and wait 20 min for it to warm up

I make what I feel to be superb waffles, by the pound! Stacks and stacks of them, and eat till I'm stuffed, as do the lovely wife! All I add is melted butter and powdered sugar, they need nothing else! Just like I used to get in Hawaii when I was a lad, on the lanai of the Poipu Beach Hotel, in the cool dawn breezes....ahhhh them was da DAZE!! :handgestures-thumbup: :handgestures-thumbupright: :happy-partydance: :romance-heartsthree:

If I could choose the last meal of my life, THAT would be it! Besides, it was just after breakfast that the girls my age would start coming out in their new "vacation" bikinis, some of which were very nearly decent! :D :D

Anyway, enough reminiscing!

Great days and fair weather flights to all!

Pat~
Have fun, fly high, far, and free!

I used to make one hell of a pancake by hand back when I was married. I hope she misses that, probably not!.

My favorite place to go out for breakfast (umm, my favorite meal of the day) was a place called "Shady Maple"
in East Earl Pa. lancaster county Pa. If any of you are ever in the southeast pennsylvania area, you really should
treat yourself to a Shady Maple breakfast. Or dinner. It don't matter. It's all good!

P.S. How do you guys make that (URL) address say other things. Like for instance just (( Directions to Shady Maple )) ??

Heck, OldAirMail may have already ate there. Did ya have the pleasure yet Rich?
