For as long as I can remember, our family has used a Rice Cooker to prepare all of our go-han. I've also done the 2:1 rice/water ratio when Camping, and it seems to work OK.

I'm sure that when cooking rice for a family on a daily basis, a rice cooker will work well. We had one once (Got it cheap in Canadian Tire). However, it was a very basic thing and when it went south, I looked up Delia Smith and have used her mehod ever since. We have Korean friends that swear by their "fuzzy logic" rice cooker, which cost them an arm and 2 legs. They can decide on how well the rice is cooked, how sticky and how fluffy. Quite the machine. However, I'll stick to the DS method, as I don't like sticky rice done their way. Mind you, our friends have enough time to do a multi-course meal while the rice is taken care of. They haven't shown signs of arsenic poisoning either.

Right-O then.... ...

In a minute I'm going to finish off the left-overs from my last night's Madras Beef Curry, add some quartered boiled potatoes from today's dinner, some more chilli flakes, and a drop of coconut milk...Re-heat.

...and cook the rice as per 2-1 ratio. Saucepan: Boil the water, pinch of salt, small knob of butter, add the rice and cook very slowly for 20-25 minutes with the lid tightly in place.

I suspect it will turn out quite nice!... ...!

(Will pop any Arsenic left-overs in the mouse-hole).

I never boil rice, but use one of these. I have had it for the last twenty years and it makes perfect rice every time. Add rice, pour in boiling water, put on lid and wait 20 minutes. As I said, Perfect rice every time.

You put the rice in the container with holes on the bottom.
Add boiling water to clear the bottom of the rice tray.
Fit the lid.
Allow the rice to "steam cook", clear of the water, for 20 minutes?

Must pop into Sainsbury's to see if they have one!

Yes Paul, almost. The rice goes in the colander part, then all you do is drown the rice. I boil the kettle and fill the water to an inch below the edge. Place on the lid and as I said in 20 minutes, perfect rice. After said time, drain the water. I generally then rinse the rice with another dose of boiling water. This cleans any remaining starch and ensures the rice is good and hot..... And not a second in the microwave is required............
I have been cooking my rice like this for the last 20 plus years. I will never boil rice again. One small tip, par boiled rice is the best, but normal rice works fine too. Basmati rice can require a top up of boiling water as that tends to soak up the water more than others.

My experiment last night with cooking the rice went totally pear-shaped!.... ...!

2-1 ratio, water to rice, cooked in a pan, very slowly, with the lid on for 20 minutes was FAR TOO LONG!

It turned out like crunchy lead shot!.... ...!

Probably 8-10 minutes would be much better.... ....

So its back to the saucepan again...with assorted colourings and flavourings!... ...!

I think the technique is to cook the rice just long enough for ALL the water to be absorbed in the right ratio...and no longer!!

I probably should have married a Geisha Girl.....(I should be so lucky!)... ...!
