How do you go about longer flights?

When I fly my 737, I'll put in the autopilot, minimize the ATC window, sit back, and wait until they tell me to do something

I am new to FSX. Picked up a copy of it the other day at one of the shops near my place. I was shocked to see how realistic it has become. Didn't bother to take a 2nd look at it during its "infancy" versions.
