If your referring to heavy trasnport category airplanes in FS2004 which i think you are. The cockpit in FS2004 airliners are GREATLY simplified. the basic nav capabilities are there with the flight instruments but thats it. You dont have to really manage any systems or anything like that. So as far as flight sim goes you are on your own to run the flight deck of a 747. In the regard of transport category aircraft FS2004 is not really that accurate. but i think it is meant more for General Aviation stuff.
