Cold start

Can someone tell me how to enter the sim with the aircraft shut down for a cold start?

And another little thing I notice at startup, when I start the sim the time is indeed my system's time, according to the settings, but once I choose my airport, that is on the same timeline as I live, the flight time has changed by about 8 hours.
How do I make the sim indeed start up with my system's time as is in the settings?

A cast-iron certain way of locking the settings is to plonk your aircraft on a runway (say JFK), then adjust all the settings (including weather and time, engine on or off etc), then save it as 'JFK'.
Then when you start FSX again, simply load in that flight and it'll be exactly the same, nothing will have changed.
I've got saved flights that way all over the world (below) and i know that whenever i load one in, the time, location (and everything else) will be exactly what I saved them as-

I'd your talking about the NGX, go to your FMC>PMDG Options>Panel State>Load>NGX Cold and Dark.  All the systems are off, and ready to go.  If you also want a realistic align time, go to PMDG Options>Options> Aircraft>IRS Align Time>Realistic Time.

When you start the sim, the sim applies your system time to the time zone of the default flight (seattle, wa, usa unless you have saved a new default flight). When you then select an airport in a different time zone the sim makes the time zone adjustment.

Set up a flight at your home airport and then save it, putting a check in the box to 'Make this the default flight'.
(Also set your 'cold start' options, aircraft and weather as mentioned above.) This flight will then be the one loaded into the Free Flight window when you start the sim. These settings will be applied to any flight you create in the Free Flight window. Of course, if you set up a flight in a different time zone the time will be adjusted.

The default flight settings will not effect flights that you load from your saved flights.
