Calculating fuel & payload

Hi all,
I want to start make my flying more real. How do I calculate the correct amount of fuel and payload for my trip, with not too much and not to little, because I tried it and ran out of fuel.

I don't know how they do it in real life, but I just put the amount it says you'll need on the nav log + 15% of the total amount of fuel the aircraft can take + 3000 lbs for taxiing.

F = n + 0.15t + 3000

Despite being a pilot in real life, I tend to skip out on doing much fuel/payload calculations in FSX with the exception of airliners and the odd jet.
