Turn on thermal visualizations and select "natural" and you should see buzzards...er... eagles... around areas with thermals for gliding.  As far as I know, aside from addon scenery, that's the only way to see birds outside of missions.

Actually, there are also animated birds which are part of the model of some boats.

most of the "animals" will only show up in missions and NOT in free flight... other than Birds that are used to show Thermal Updrafts for gliding.  You will never see Giraffe, Elephants, or anything else walking around outside of the missions.  sorry. Not going to happen --- unless you have a specific scenery area (ORBX - ORCAS ISLAND) that call for that object.

I don't know if it will make any difference, but set your weather theme to "fair" since "Clear" removes thermals, as far as I can tell.  You also have to keep a sharp eye out, since they are smallish.

Another thought, set the thermal visulization to "Schematic" to get an idea of where they might be located, then change back to "natural", and the thermals should be in the same areas.
