I use the default Beech Baron most because I like props and the barron can cover more ground than the single engine Cesna.
I base my Baron at O'hare Int, Chicago. Although I often move to other smaller runways for quick flights because Ohare has so much taxiing involved.
Cold start is the way I go for realism.
I usually use cold fronts for weather and always fly in real time. If it's dark out when I fire up the sim, it's dark when I fly..

It changes.  A really good new add-on gets The "default" for a while, or a new repaint, or effect test. 

At the moment, since I got FSRecorder and FRAPS, It's the Black Pearl III (Spindrift), at 400,000 ft. over Pensacola NAS, poised to plummet towards, and land on, the "Pensacola Aircraft Carrier". 

Landing on the carrier's not too hard, but due to the "unique" characteristics of the Spindrift on landing, I keep running over the recovery crew before whobbling to a stop.  Most embarrassing.  :P

Currently, default Baron, but with a painted on reg #; Bremerton National, fair weather, FTX PMW. But I usually change aircraft, sometimes location, and often change to real world weather. I also fly at or just after dawn pretty often. I probably fly the Aerosoft Beaver more than anything else, but I have not set it to the default flight yet because I don't have the livery I want to look at every day yet.

Carenado C172 - currently doing flight training in a 172
Any one of the many airport in Hawaii (changes daily) - spent about 80% of my flying time Hawaii
Real World Weather - it's Hawaii, the weather always nice.
Dusk - when things look :o

Cold n' Dark - it's the most realistic

I use a custom painted Yak-141 because it's awesome (yes, I know there are really only two... maybe I stole one) based at a ramp at Toledo Express Airport (which is right near where I live).

I fly at whatever time it is in my own timezone with the exception of long or supersonic intercontinental flights (in which I use the UTC) and always use Real-World-Weather.

Default flight in both 2004 and X:

Location:
Rotorua International Airport, Rotorua, New Zealand -- Parking spot 8.
Weather: Real world
Time: System time (usually change it to whatever I want after it loads)
Aircraft: default Cessna 172 (for best systems configuration when I change to an addon, like the PMDG JS41.)

Scenery:
RealNZ Rotorua/Tauranga package. (both sims)
Vector Landclass Project (FSX)
VOZ 1.8 North w/ 75m mesh and "Roads and Rivers of New Zealand package" (VOZ + mesh is free, R&R of NZ is payware. FS2004 only.)


Formerly in FSX, my default location was at Aerosoft's "PHDH DillinghamX" (Dillingham Airfield, Hawaii).
