Is there any way I can change the default RWY for a particular airport?
Prefer 5 vs 23 which the tower ALWAYS directs...

Couldn't you just change the wind direction?
Say to oh ...230 degrees. I don't think they'll direct you to a runway with a tail wind :-?
Then just save your flight and check the "make this my default flight" box and, you're good 2 go

If you go through ATC, they will always direct you into the wind (so the plane has more lift), not the runway you prefer. However, the runway going into the wind SHOULD be the runway you prefer.
