(i dont have Accelleration) but is there a button or gauge inside your aircraft to tell the CATapult how much force to use to launch you off the deck?

There's a key to trigger the launch. Take a look through the button assignments to find it, its been ages since I've reset it so I don't remember the default.

Shift U - lower launch bar
Shift I - arm catapault ( should stop plane moving when throttle increased )
Shift Space - Launch

Note the plane must be in correct position on launch pad for it to arm, so if rear deflector doesnt come up, then move plane a lttle and try again. Its not as simple as putting the front wheel in the box.
