Have you tried deleting (well, renaming) the FSX.cfg to let FSX generate a new one on startup ?

You might like to check the 'Full screen resolution' from FSX\Settings. Make sure it's set to the native resolution of your monitor.

make sure that WideViewAspect=True is true becuase some scenery add-ons modify the .cfg without informing you.
