I notice that the majority of aircraft use a wheel to adjust elevator trim.

If you go to the options menu and go down to the selected option. Try letting it set the mouse as a key, I.E
Select the option, and use your scroll button.
If it works then your set.

It might be possible to set it in the default fsx controls as the poster above states...However, the payware FSUIPC has the mouse wheel trim option specifically.
