Below is my aircraft.cfg that pertains to the flisim's. My suggestion would be to make sure that your sim's are sequentially number 0, 1, 2, etc. Do not skip numbers and do not have any thing like 0, 1, 2, xx, 4, 5. It has been my experience that you have have a sim in the middle and use XX as the number or something else to deactivate the sim then it may cause problems.
It has been awhile since I messed with this, but as I recall some of the textures would not display correctly and I also downloaded some new textures from Avsim so my textures may not agree with yours. I would delete any sims out of you cfg file that you do not have textures for and whatever is left make sure that you have them numbered in order.
Also check and make sure that you have correctly entered the correct folder location for model, panel, sound and texture. Note that in my cfg, panel is only "panel=" and sound is only "sound=" that is becuase the panel folder is only named "panel" same thing with the sound folder.
