On fsx, with every other aircraft on the game, anytime i engage the autopilot, the aircraft automatically flies leveled like it should. However, when I fly the A321, and I engage the autopilot, it raises the nose up to or above 20 degrees in climbing. Why is that? Can anyone assist me switching it to where if I engage the autopilot with A321, that it will fly straight and leveled. Its greatly appreciated! Thanks!

You probably haven't got the plane correctly trimmed for straight and level flight before switching on the AP

Hope I am understanding you correctly:
Once you engage the AP then the aircraft holds a postive climb rate?
I assume this is shortly after take-off (Once established positive climb, lifted gear & flaps) as my understanding of the Airbus is that it ain't really meant to be flown by hand aka, Fly-by-wire systems.
Climbing to cruise level and then only engage the AP could be part of your problem.
The AC will only maintain level flight if you have instructed AP to maintain level flight. Therefor make sure you climb/decent hold indicater (normally left to the altitude hold switch) is set to 0.
I also understand you cannot manually set the trim once AP is engaged.
I don't fly heavies so I could be dead wrong too
