Ok so,

You might want to post a screenshot to show exactely what's going on in your cockpit.
However, from what I remember, the virtual cockpit textures would get blurry when the video memory of your card starts to get overloaded. Maybe you are a little bit too optimistic with some of the settings of your game which are consumming too much ressources for your hardware ?

"Global texture resolution" in Settings -> Display -> Graphics affects VC textures. Might want to make sure it is set to "Very High".
