My monitor is a 1280x1024, but I usually run FSX at 1024x768 because it gives me an extra 3 fps. But one person (not here) commented that my screen shots look "out of focus", and I kinda see what he means.

In spot/locked spot with large aircraft, when at 0.30 zoom, I can see the whole aircraft. But then, if I reset the flight or go to record (some activity that takes me away from gameplay), then go back to the same view, I can no longer see the entire aircraft; instead the wing or tail is in my face.

Is this caused by running the game at a resolution other than my monitor's resolution?

No this is not linked, don't worry.
Your problem is based on two elements:
- the zoom, that you can adjust with '+' and '-' (after having "selected" the zoom by pressing BACKSPACE)
- the view distance, that is the distance between the "camera" and the plane. You can ajust this distance with CTRL+'+' and CTRL+'-'. The movement is veeeeeeeery slow, so keep it pressed and be patient

In this way, you will be able to get your plane completely on the screen wihtout having to zoom completely out like you do (0.30 gives a strange perspective, called "fish-eye" effect)

So what causes it to be normal one minute, then after resetting the flight, becoming fish-eyed?

The default zoom in external view is 1x.
When you lanch a flight, the zoom is set to its default value, it's not kept from your previous flight.

I hit backspace to reset the views both times. The "default" view doesn't know what it wants to be.

mine does that exact same thing

mine looks exackly like that and thoose screans look fine :-/
