Missing VC Yoke

I just got into my Orbit A320 (or is is A321?) and there's no flight yoke in the VC.  That space is just empty and I can see everything on the dash.  Is this an error with the aircraft.cfg?  I haven't changed anything..

Okay....now I feel foolish...That little filght stick toward the left is the flight controls, isn't it?  Oy...

While I'm talking about the A321, does the rudder not work during flight?  It's fine for taxiing, but there isn't any rudder movement during flight.  The pedals in the VC move but not the tail.

Is that a plane by plane option?  Because I'm doing a long list of destinations and the A321 had that problem but the 777-200 didn't have that problem.
