Hello Amaru.
FSX has multiple views and I can assure you that the default aircrafts are complete, they all have a virtual cockpit (panel in 3D) and an old style cockpit (panel in 2D).
You have to circle through the views with the S key. You will see that there is an external view (spot view), a tower view, and an internal view. The important thing is that each of those views can have several modes. To circle through the modes, you have to press the A key.
For example, in the external view, if you press A, you will circle through the view that moves a little bit following the aircraft, then the view which is fixed, then the sattelite view, then the fly-by view etc... and it's the same with the internal view, you will circle through the various positions in the virtual cockpit, it depends how many positions are defined in this aircraft (you can have only one or two, or several).
Once you are in the internal view, you can also use the keys F9 and F10. One of them is for choosing the virtual cockpit, and the other one is for chossing the 2D cockpit. If you are in the virtual cockpit (VC), most likely your view zoom will be set at 0.70, which might be a little too strong. Press - once or twice to zoom out to 0.50, you'll see much more stuff.

Or, keep pressing the - key all the way out to .31 zoom for the most realistic view.
