You'll need to edit the camera.cfg which is in the same loaction as your fsx.cfg file.

The Config fille is located in C:\Documents and Settings\username\Application Data\Microsoft\FSX
You'll have to go into folder option control panel to switch on hidden files and folders to see it, once your happy hide your folders again.
The zoom level is defined separately for each camera view (definition.)
Camera definitions are located in two places. Generic definitions (applicable to all aircraft) are contained in a file called "Cameras.CFG", located in the same folder as "FSX.cfg". Definitions specific to each aircraft are located in that aircrafts "aircraft.cfg" file, located in that aircrafts folder.
The item to change is "InitialZoom = ###" where ### is the zoom factor you want, in the same format as displayed on screen. For ".40" zoom it would be "InitialZoom = .40".

Have you had any joy with changing camera views? i would liketo know how you got on as its one thing i keep meaning to change.
I like the long wing wiews, and apart from that, it shows textures better!!!
Too much zoom gives blurries, on anyones computer.
