Has anybody figured out how to edit config files with Vista or is it impossible?

You mean CFG files? They can be opened, and edited with Notepad

Yes. Copy from the aircraft folder, paste to desktop, open, edit, save, cut and replace in the aircaft folder, say "yes" to "replace". (Some advise making a backup or renaming the original first, but that's optional)
If you get the "open with?" or "View with?" box with options, choose "Notepad".

I just recently figured out out to make it stay.
You have to right click on the folder, and go to security, and then set it so you can modifie the file.

Unless you have an urgent need to keep the security I suggest you go into control panel and turn off the Admin controls entirely.
