Airplanes still funky

My airplanes are still funky and am posting this since my old thread has died along time ago; I would like to know how has funky airplanes controls? When I take off: it either pulls to the left or to the right too much,then it always wants to go up. I can't get a steady leveled flight. (bangs hands on airplane controls)

Right. Let's start from the beginning. I've looked through your original thread & note you have a joystick. I assume you have the aircraft realism set at Easy. Which aircraft are you having the problem with & which joystick are you using?

Make sure that you auto pilot is not on. I have saved flights and later come back, forgot I was using the AP and reset my flight to start at a new airport

Just to add my two-yen:
1) Make sure your trim is set correctly before take-off. This has given me no end of rude surprises during take-off when I have discovered my trim set waaaaay incorrectly, causing my plane to go everywhere but where I intended.
2) Check for crosswind. I don't know what weather settings you are using, but any significant crosswind is going to cause you to drift one way or the other. Oh! This may be a good way, too, to check on your problems over all! You might want to check to see if your aircraft is pulling in a direction against the crosswind instead of with it! If so, this really indicates some sort of issue, whether within the simulation (such as improper trim), with the software (FSX having gone right bonkers), or with your hardware (your joystick having functionally turned itself in a heap of plastic fit only for a decorative paperweight).
As a note, I have noticed that on taking off, FS aircraft do pull A LOT to one side or the other, that side more often then not being to the left. I have heard of various tweaks for this, and I hope the rather clever people who know of such things will post again in response to your question. In the meantime, if you are noticing your aircraft pulling consistently to one side during take-off (say, almost always to the left), then for the time-being, you can try applying a bit of rudder in the opposite direction to keep your aircraft heading straight. This is, truthfully, what I do on nearly every take-off, especially in single-engine prop aircraft such as the Cessna's (which will pull because of engine torque, anyway).

I was thinking about posting about this problem as I too get it a lot! for example say I go to fly my f-15, it will drift to the left by itself, even when taxi'ing. But on another occasion it will be fine. It's got to the point where it seems to be about 50/50 as to wether or not it'll happen, on a lot of aircraft.
I found that a few sharp turns of the joystick in the opposite direction will solve it most of the time. Like if I notice it turning by itself to one side, I whip the joystick very sharply the other way.
I also noticed that once in the air for a bit, it will sort itself out (usually)
weird & annoying!

Sometimes my planes will do the same thing.... almost like a car out of alignment. What I do is just rotate the joystick all the way around. You will see all the moving surfaces of the plane move as well. After I do this, it usually centers everything and I can get on my way. Ive come to do this before I ever taxi now.

I usually fly with clear weather option, minimal wind etc...

Minimal wind does not mean 'no wind'.
I did a flight just 10 minutes ago, started from Ulrichen, there was just 10 knots of side wind, and I had to struggle to keep the aircraft lined up with the runway. That's just normal.
Also, keep in mind that even if you select "clear weather", your weather modification slider being most likely set at "Medium" as anybody here, the weather will change anyway after a while. So you'll get wind in the end.

Sounds more like a hardware (joystick) problem to me.
