1) Go to your FSX Settings Menu.
2) Select the Controls button (upper right corner).
3) In the Settings - Control menu, select the Control Axes tab.
4) In the Control Axes tab, under Controller type (pop-down menu) select your joystick (in this case, Logitech Extreme 3D Pro).
5) Go to the Assignment list in the lower half of the Control Axes menu tab (right below where you just selected your joystick type).
6) Find Rudder Assignment and click on it.
7) With Rudder Assignment selected, click on the Delete Joystick Assignment button near the bottom of the menu screen.
This should stop the twist-axis of your joystick from controlling the rudder. If you have any more questions or need a screen shot to help with the above instructions, just ask.
