Unrealistic open canopies on jets

Open the canopy on a jet at mach one. :-/
Do the real jets allow you to open in flight? I would assume it'll be ripped off from the hinges, smashing the tail plane.

The same for under carriage, I can lower gear at high speeds, wouldn't it be damaged?

Lowering the gear while at cruise speeds would not damage the gear , It would completely destroy them! :o In the case of military jets the cockpits have to be able to open for ejection purposes and most of them blow off so they do not hit the tail of the aircraft.  8-)

Fair enough, so why isn't this damage replicated into FS-X? Also I think you can fly through trees in FS-X? (realism is on max) Can you eject in FS-X?

Also crashes look rubbish. I liked to fly inverted at 100' in F-22 and then eject! ;D

For the landing gear, it seems to me that some planes do handle the gear damage, but this damage is not visible until you try to land.
The only visible thing is when you cannot retract the landing gear anymore.

For the canopy, I do not think there is any damage modelling on any plane.

FSX removed the majority of crash damage. I guess they decided to back off on the disaster end of flying.
