I cannot get the FSX OV-10A Series FSX-ONLY  gauges to display, the plane works but the gauge area is just blank. I have the PC-7.cab file, where do I place this? Do I leave it in cab form or uncompress it?

It's taken me hours just to install a few planes

You must NOT unpack this cab file. Just put it right into your "Gauges" folder in FSX.

I tried that, still didn't show the gauges. :-? Also on Red Arrows plane the top area/viewfinder bit is black (virtual cockpit) I have to go to 2D cockpit for this plane.

this is no my busisness , but yes you can descompress the file in to a folder with the same name it has as cab for example PC-7.cab open a foder  with the name PC-7, having all the XML and bmps inside..it will work the same.

But WHY do you need to do that for? Leave the Cab as it is, unless you have cabdir or other cab compressor , and search for the base of the issue wich should be in the panel folder..I would help you just give me the link of the bird..

Having the archive of that plane on my computer, I had a second look to it and recognized that the needed gauges are included into a file nammed "ov-10a.cab". Be sure to place this file in the gauges folder as well.
