Exactly what the title says. Feel free to contribute to this! I will divide into sections so try and fit in an easter egg in one of these sections. :) I was the first on SimV to report the "airshow scenery" aircraft (Oshkosh during missions). :)

Extra Planes:

A380
An-225
Aurora?
B737-400
B747-400/800
B787-800
B-52H
B-52 Balls 8
B-58
Concorde
DC-3 Fantasy of Flight
Ekranoplan
F-16
F-16XL VISTA (although the delta wing is NOT modeled)
F-18
F-22
Fastmover
MD-80
SH-60
SR-71
Su-37
SCA (747-123 Shuttle Carrying Aircraft)
Space Shuttle
UH-60
X-2 Skyrocket

Scenery:

Canberra Fountain (near Parliament House, in river, you will see what I mean)
Birds in flight around docks, cranes, beaches and ships
Bastille Day Fireworks
Milky Way (where applicable in real life)
New Year Fireworks (11:59 PM, December 31st, fly around the major city of your choice)

Other points of interest:

The aircraft carrier included with FSX is a strange beast. When modified to become sailable, its contact points do not matter, the model will hit the sea floor, and cause it to jump around. It is also probably possible to land on it, even if someone in multiplayer is using it, and with the new Acceleration version, it may be possible to launch and trap on it.

Cool. I knew about most of those but... it would be nice if they were flyable.

I was pretty startled when I saw the SR-71 Blackbird on the first mission.

I got FSX for Xmas (Yes, I know, I have a terrible computer but I should be getting a new one so I'm putting this one to the test.)
I almost pooped my self on the Secret Shuttle Mission, I have to uninstall it now for SP1.

Well in thought you could fly those. You could use it a "base" model, then add more polys to it to smooth it out and add new textures, a FM, a panel, and an config. file and it might work.
P.S. There are the Northern Lights too. (Aurora Borealis)

I have modified the Ekranoplan to fly in FSX, as some of you guys know, however, I have decided not to release it - why? Well, my personal version uses Alphasim's Orlynok flight dynamics, and I don't know how to make the default 747 dynamics "floatable."

The Blackhawk flies in one (standard, don't know about Acceleration yet - have only done the Carrier Practice mission) mission, so it should be no problem to get that flying.  ;)

A few that I found, but didn't see listed here:

Extra 300S (Reno)
Piper Cub on floats (San Juan Island Run)
Piper Super Cub (Midwest Fly-in)
Helio Stallion (Midwest Fly-in and CAP Search + Rescue)
Jodel (Finding Your Way)
F-117 (Executive Tour)
V-22 (KEDW update in FSX Acceleration)
C-17 (also at KEDW)
B-1B (KEDW)
C182 (extremely low-quality model, at Midwest Fly-in and a few other places)
L-39 (Reno)
Hawker Sea Fury (Reno)
X-1E (KEDW. I'm assuming that you misidentified this as the Bell X-2)
Flying Saucer (the one that almost collides with your aircraft in Secret Shuttle)
C185 Skywagon (Finding Your Way, along with several other missions)
Piper Cub (Finding Your Way, and others)
AT-6/SNJ Texan/Harvard (Reno)
UFO "Bogey"
UFO "Mothership"

that's all I can think of, at any rate.

You'd have to do the animations as well. Propellers, fans, landing gear, control surfaces, you name it. I tried to do that and just gave up. I eventually downloaded some of them from Simviation and they work fine.
