Sorry for a dumb question, but how do you change the field of view (fov) in the game?
I didnt find anything in the commands and fsx doesnt react at all on any changes in cameras.cfg. InitialZoom, ZoomPanScalar, even ShowLensFlare dont change anything at all.

If I remember right, the "Zoom" feature equates to the fov.

I was just doing a little hunting around and realised you may be referring to the tweak to make FSX display correctly on a wide screen monitor. If this is the case open up the FSX.cfg file and under the [Display] heading there should be a line which says WideViewAspect=False. Change the False to True. If the line doesn't exist insert WideViewAspect=True under the [Display] heading.
If you aren't referring to the wide screen tweak then you zoom the view by pressing the - and + buttons
