It's possible only with FSX "native" aircraft. Those that have seperate interior and exterior
models. Have a look at some of the default FSX aircraft folders, particularly the "model"
folder. The ones that have two .mdl files included would be the FSX "native" models.

I'm away from home on my traveling laptop so I can't give you any more of a
detailed description of what to look for.

As far as FS9 aircraft, the answer would be "no".

Like Gypsy_Baron says.. it is possible with planes modeled for FSX. The interior model is seperate from the exterior and "linked" in the model.cfg file.

The only problem is that the reference points can be off. An interior model from a Lear "can" be used for a CRJ, but you'll be sitting pretty far back, relative to the exterior model.. Plus, if there are exterior part visible (like wings), you see the wings from the interior model.. It would look funny to see KingAir wings from the cockpit of Rockwell Commander

ok, i'm going to add a question on to here. Say I get a FS9 aircraft with no VC is it possible to add one on by copying the interior model and config lines from a default FSX aircraft?

No. As already stated this is only possible with aircraft modelled specifically for FSX using the FSX SDK & configured to use a separate VC model

Thanks Hag, that's what I thought but I was checking just in case. Is it possible to edit the model to the FSX format?

I hesitate to say that anything in this hobby is impossible. Whether it's practical is a different matter. I would say not.
