Well, the title says it all. On ground, I have full rudder authority. Once in the air, I have none. The rudder and ailerons are not set to sync. The null zone is set to a middle setting. In calibration all seems fine. This is happening with all aircraft, with the exception of a tiny amount of deflection that I can get on the default 747. Any ideas?

Sounds simple/stupid, but make sure that the Yaw Damper is off. For some strange reason, its on when I start ANY flight at all...
