When I use the hat switch to look around in VC, and then try to look straight out the front, it doesn't always center.

I have the same problem sometimes. What I do is I just hold down the space bar and use my mouse to set the view to where i want it.
Your VC locks on to the nearest runway? WTF?

locking onto the nearest runway is an option you check in the virtual cockpit mode by right clicking. you might try right clicking and going into normal VC mode.
the best way to center your screen without it being a Pain in the Arse is to hit space bar to activate mouse look and center it as best you can and then hit space bar again to disable mouse look.
OR - get trackIR 8-)

To get your view centered, press CTRL+Space. ;)

Actually, to reset view ahead, you can assign a button on your joystick, in Settings>Controls. The command is Look (reset to forward view) or shift+num decimal.

Yeah, the pan view is rather sensitive in FSX.

Or - if you are a Wheelcam user - hit CTRL + Left mouse button.

Um, by default CTRL+Space resets the view
