I did many flights takeoff and landings, but in the logbook they all are recorded as normal flights and not under instrument.
Many were done under IFR flight plans and under VFR flight plans also. Hor can I fly under instrument landings?

If you did use instrument, you should see it in the logbook, which is located on the botton right corner. It is part of the Column subtotals. Is that what you mean?

Try landing at night or in very low vis conditions to get IFR, the sim probably only recognises that as IFR.
..But i may be wrong ;)

Thanks, yes that is right. But how can I do a full instrument flying?

the sim will probably only give you IFR time when you are actually flying in weather conditions that produce a visibility which is less than 3 nautical miles (not 3 nautical miles... it will have to be some value LESS THAN 3 NM) real pilots can only log IFR time when they are flying the aircraft with no outside visual reference... just because you are on an IFR flight plan on a clear blue day doesnt mean you are getting IFR time.
if you want to do full instrument flying customize the weather.
set the ceiling to somewhere around 800 feet above the ground level, and place the top of the cloud layer around 3 or 4 thousand feet.
set the visibility to about a mile or less
add moderate rain if you want
fly IN the cloud layer where you cant see anything out the windows of your plane not even when looking straight down... then and only then are you truly IFR
