I have downloaded a few paintjobs for FSX to add to the airliners... how do I install them?

I would not imagine it would be any different than FS2004, But you have to make sure the textures are for FSX as not all FS2004 textures will work in FSX.
All you have to do is to pick a aircraft open the aircraft cfg file and then make a new entry like below
FLTSIM1=new texture file
I am at work right now so the above might not be worded correctly but if you open the default B737-400 aircaft cfg file you will see what I am talking about you just have to use the next logical number in the fltsim line then create a new folder in the aircraft for the new textures it has to be the same as the name you use in the fltsim line or it will not work. 8-)
