Well, the view options may not be appealing to you, but they are to me. In my honest opinion, I like the additional view option. I know there are addons capable of such things for FS9, but some people don't have the luxury of spending extra money on a payware addon like ActiveCamera and Walk-n-follow. Even the freeware addons like Recorder can be lacking sometimes.
In the case of the loooooooong loading, that's just a simple case of FSX loading up highly-detailed scenery files since the scenery now supports a resolution level that not even payware addons for FS9 can handle.
Although I do agree with you on the menu. I don't mind the look of the interface and it functions [in fact, I like the functions; you can even zoom in and out on the aircraft preview window]. However, that fact that the menu is not in full-screen mode tends to bug me as it gives some users a false sense that the sim has crashed [even though it hasen't].
Overall, I like FSX over FS9. I like how they improved the terrain [my car addons drive better on them], how they implemented the flat spins [yes, you can flat spin; it has been proven], I love the space feature [hello star wars], and I ESPECIALLY love the bridges because now I can drive on each and every one of them [except the ones made for the trains] compared to FS9's bridges. Of course, there are some bridge addons, but most of them are just for looks and don't really have a function of their own.
