I've always noticed, but never thought to figure it out.

The course adjustment on the jet's auto-pilot is just like the course adjustment on a regular HSI, or even like the OBS on a VOR gauge. If you're using the VOR indications in the HSI for navigating, you'd dial in the desired radial as the "course". And of course (no pun intended), you'd dial in runway heading when using the HSI's
