It's only for the large jets (I think, haven't tried it with others), but go to "aircraft view" then press A 'til you get the desired view. Not sure what your second question is. :)

wingfold and unfold refers normally to military planes old and new.   On carriers in ww2 or so, the wings flipped up to save space on the deck.   Modern jets not as sure...if that was your question  ;)

" wingfold and unfold refers normally to military planes old and new."

Wingfold  and tailhook
are standard FS keyboard commands (can be assigned to joystick or other) and operate anything designated by the model designer.

All FSX View Commands are list in the kneeboard (just like in FS9) but instead of pressing F10 to bring it up it's SHFT+F10; e.g.,

FSX VIEW COMMANDS 2-D Cockpit (cycle panels)= W
Snap to Panel View= SHIFT+Num Pad 0
View (next category)= S
View (previous category)= SHIFT+S
View (next view in category)=A
View (previous view in category)= SHIFT+A
View (previous view toggle)= CTRL+S
View (default zoom)= BACKSPACE
Look (snap)= Num Pad
Look (pan)= Hat switch or thumbstick

The model designer may use other assignments; check the panel or aircraft readme file
