Native Grumman G-73 Mallard v1.0

This is a beautiful aircraft and well detailed. However, I can only select zero flaps or full flaps although the aircraft.cfg file shows two settings and the panel shows a takeoff setting.

Hi,

I have just downloaded but not installed it yet but looking at an actual manual, there were mainly only two positions, 0° deg and 45° deg for landing.
No flaps for takeoff, down at 45° for landing and retract flaps on landing after speed has dropped to 50mph.
However, the manual does mention two other positions for gusty conditions so there should be 4 possible flap positions in total.

From the manual and accepting and assuming Grumman still have copyright: The intermediate settings (7 1/2° and 30° ) are for gusty conditions;
a balancing mechanism regulates the selector valve action in the intermediate setting

The G73 Versions 1.1 and 2.0 has the flaps at '0.00, 17.500, 35.000' . They split the difference I guess. You can use this if you want. With full flaps it stalls at 61 kts. You should be able to slow easy enough if you use less throttle AND more positive pitch trim. It's the pitch trim that allows you to slow yet maintain nose up attitude for good landings.
