You have three or four switches over your head, on the right. Once they are all on OFF, you can deactivate the "flight director" button of the autopilot. You have control :)

Thanks for your suggestions. Frankly the A321 on fsx is behaving sloppy on my computer right from the time I installed FSX. So after take off, and if I want to level-off, it just doesn't seem to be possible on the A321. You drop like here and there..just the nose goes up and down. However I tried an add-on airbus plane from this site and the controls are smoother and just no problems..I was able to do a normal flight but when it comes to the default A321 on FSX it is hard to control it. I know this is a problem because I have flown other planes on FSX don't face the problem. Any pointers?
What are the 4 switches you mentioned? can you name them? I tried switching off 4 switches but the autopilot kept switching on automatically and even the flight director on the A321 and then I have to switch it off...but anyway it was just not possible to have a level flight on the A321.
Another question..which is not related to A321, I noticed after adding some planes to my game, the CRJ appears bright blue in night vision only, do you know what could have caused this?

Thank you.

The default A321 is the only plane that uses the fly-by-wire simulation system included in FSX.
All other addons do not use them, so you control them just like a 737.
The switches I mentionned have quite explicit names, evzn if I don't remember them exactely.

Some months ago, I tried adapting the fly-by-wire system on a jet-fighter plane, just to check. Unfortunately, I haven't been able to figure out all the aircraft.cfg parameters that needed to be adapated. The fly-by-wire system was there, but the manoeuvrability of the plane was catastrophic. I should take some more time to investigate on this.
