I'm either looking to do a trans global, many stops flight, or a straightline challenge, from east to west coast USA. but cant make up my mind, any advice?

....I just go to Sainsbury's and back, on my bike... :).... ;D...!

How about doing the "Route 66" run, from Chicago to Los Angeles (Santa Monica).. ;)..!
(Google the Route 66 Map).
Almost East to West Coast.... :)...!
