where the save files and screen shots are saved?  Right now, they default to my c drive, but i have that set up as just a partition, and that gets full fast....

I don't know about the saved flights but for screenshots using a screen grabbing utility works much better than the default FSX screenshot function. I use FSScreen. It's a tiny program you drop into a folder anywhere on your computer. When you hit Print Screen it puts the screenshot in whatever folder you have the program in. Another good utility is YAFSScreen (Yet Another FSScreen). It's a newer version of FSScreen that allows you to set the file format and save to location. Irfanview can also do screenshots.

All three are free. FSScreen and YAFSScreen can be found here at SimV in the Misc section of the downloads. Irfanview can be found with a quick google.

Saved flight, flightplans and screen captures are all stored within your 'My Documents' folder.

You can move the location of your 'My Documents' folder

In short, on your desktop, right click on the My Documents folder and on the Target tab click on Move.

Note: if you have saved a 'custom' default flight you'll get an error message the first time you start FSX (Can't find default flight, loading.......). Don't worry about it, you just have to select the flight from your saved flights and save it as default again.
