AirBus A321 Question

I'm a noobie to flight sim x. Most of the planes that I fly, I can adjust the what I call "the pitch" in order to keep the aircraft level. For whatever reason, the Airbus 321 (or whatever- I have the FSX) will not let me adjust that in flight. Is it possible to work "the pitch" in this aircraft? whenever i try to move it, it moves a bit and then goes back. kind of like i'm locked out!

You don't have the autopilot on do you?
Try using 7 and 1 on the numeric pad to adjust them up and down ;)
