New visitor and FS player, I have been flying downloaded planes such as Gloster javelin and Hawker hunter, how does one obtain the flight data such as takeoff and landing speeds, throttle settings etc etc, I have found the stall speeds in the aircraft config file, but have searched the net with no results. are they hidden somewhere?

The details are often included in the "Aircraft Owners Manual" in the download...have a peek at the "Readme" files in the download...

...!
Otherwise a Wikipedia search for the particular Aircraft will often reveal the Specification and operating characteristics.

vet,
Hi and welcome to SimV.
Fozzer gave you some good advice there.
You can also somtimes find the real aircraft manuals listed online for purchase. If the sim model is well done, the info there should pretty well match the real aircraft. Depending on the plane these can cost anywhere from maybe $25 to a couple hundred dollars.
best,
.............john

Welcome to SimV, vet.
Quite often the modeller includes some basic information in the 'readme' - otherwise you can usually get some (free) basic information by googling the aircraft name plus say 'pilot's notes' or 'landing speed' or other key phrases.
I don't know if you're using Dave Garwood's excellent Hawker Hunter? If so, that's one of my current favourites. I got basic information like takeoff/approach speeds, revs, flap settings etc. from this (RAF veterans') site (scroll down for chapter headings), and found that they suited the model very well:-
