At some point, before I learned better, I overwrote the aircraft.cfg for the default Beech Baron 58. Is there a way to recover it from one of the disks without re-installing FS9? Thanks.

patchz,
Any default file can be recovered from the CDs. Browse the CDs and 'open' the .cab files, which are similar to .zip files, and extract the needed file(s).
Hint: In Explorer, if you use the 'Details' view, when you open a .cab file there should a 'Path' column. Clicking the Path column header will sort the files by destination folder.
I believe aircraft are on CD 1. If you check the Flight Simulator 2004 FAQ topic at the top of this forum, you'll find a link to 'Where to find stuff on my original disks'.
