[left]I have a couple of decent aircraft I found but for some reason
reason they fly real nose high pitch. I know it is somewhere in the
aircraft.cfg or maybe in the auto pilot.

Actually I beieve you will find that many aircraft - airliners especially - are designed to fly with a slight upward attitude of the nose.
This file has a brief discussion of this and some suggestions to bring the nose down a bit if you feel it is really too high:
