I downloaded the Stratojet Albatros and it works fine save for when trying to land on water. It touches down, the vaults back upstairs as if it had crashed. Any ideas as to how to get it to land on the water?

Sounds like you are hitting the water a bit fast, try holding it just above the stall with the throttle and then close the throttle and hold the stick back for a nice smooth landing as you float onto the H2O

I've tried it just as smoothly as I can, and it instantly jumps way back up into the sky-- M'soft's post-9/11, politically-correct version of a crash. I am wondering if there is some kind of box to check or uncheck if the plane is going to be originally flown from a runway or from a water...

What does adding the thumbnails do? I always delete them because I see no need for a small picture file gummin' up the works...
