I have read the lesson and flown the lesson on VOR. However, I am not understanding the gauges properly. I think I understand the concept of the bearing lines and how to intercept them but I am not quite following what I am seeing on the display and I am not seeing the to -from- indicators. I feel like I am doing something wrong. Any good links of learning the VOR system in this game?

No links, but it's really just something you pick up through trial and error. It is very simple once you figure it out.
Basically, what you do is tune the VOR frequency you want. I suggest you turn on the audio for NAV1 to hear the VOR just so you know youve picked it up. When you have, turn the OBS (thats the dial on the VOR gauge) until the bar lines up. Assuming you haven't tuned an ILS only the vertical bar (the one in line with the arrow) should move. Turn it until it lines up, and when it does fly the heading that the arrow points to. If the bar moves left, fly towards the left until it lines up again and then return to the heading the arrow is pointing to. Do this until you get to the VOR. If you have good eyes it should be visible on the ground (it looks like a sombrero).
When you head towards it the VOR gauge should say TO, usually in the bottom right quarter of the gauge. Sometimes its just an arrow pointing up, some gauges don't have it. When you pass the VOR it will read FROM or point down, indicating that you are following the radial AWAY from the VOR.
I would also suggest learning ADF. It's like VOR only much simpler. Tune the NDB frequency and look at the ADF indicator. The arrow on the ADF will always point toward the source of the signal so just follow the heading that the ADF points (in other words, get the arrow on the ADF indicator pointing up)

Not all VOR gauges have a from and to indicator on them as they use a arrow that points toward the VOR 8-)

Slim1951, I wrote up a tute on round-world flying that explained VOR navigation as well as I could. These passages may help:-

That would be an RMI "Radio Magnetic Indicator" , as found in the default Baron and KingAir.
