what time is the traffic super crowded at airports? Does the time setting affect the amount of traffic?

Tricky question. Have you only the default traffic or did you install some add-on traffic too?

If you did install add-on traffic, then I guess the AI traffic is as close as possible as the real thing, depending by the airport.

If you have only the default... ::) well, try asking at Bill.Gates@microsoft.com  ;D

Unless you can find AI traffic files that depict actual real world present day traffic for a given airport do not expect to find traffic that actually matches what is actually going on at any airport.
Project AI has airline traffic files but the majority of them are based on old flight plans. Airline update or change there flight plans several times in a given year so it will be hard to come up with the same plans you would have to change your traffic every time the airline changed there plans. 8-)

It all depends on what the percentage of traffic you have set within FS and the schedules involved with the AI flights. To open the actual Traffic.bgl file, you'll need a decompiler/compliler such as Lee Swordy's TrafficTools.

Then open the converted Traffic file using a Traffic scheduler, such as AITM (AI Traffic Mover) You can modify, create or remove flights and schedules with this program.

Most sites involving FS2004 utilies have TrafficTools available.
You can download AITM here at this site.

I have noticed that the NYC airports get busy in the morning (probably because of virtual comuters  ;D ).
